Beetroot & Pumpkin Lasagne

I made this beetroot & pumpkin lasagne with a potato dauphinoise topping and homemade vegan cheese. I made the cheese out of cauliflower, nutritional yeast, almond, cashew, yellow pepper, cayenne pepper, and salt which I blended together.
